My husband loves KFC.  I do not (who would have guessed 🙂 ).  After many failed attempts I have finally found a recipe that he loves and that is much healthier.  I use a Phillips Air Fryer to cook my chicken.  The chicken is left very moist while the skin has a definite crunch.  Any air fryer would work and if in a bind a very hot fan forced oven would produce a similar result but may dry the chicken a little as you would need to cook it for longer.  If cooking in an oven I would advise that you only cook chicken that is still on the bone.  Thighs have a higher fat content so they would not dry out at much as a breast would.
Crispy Skinned Chicken
- 1 whole organic free rang chicken (cut into 6-8 portions)
- 2 tablespoons wholemeal flour
- 1 tablespoon smoked paprika
- 1 teaspoon dried garlic flakes
- 1 teaspoon dried onion powder
- 1/4 teaspoon chilli powder (optional)
Place all dried ingredients into a bag with chicken.  Shake until all pieces of chicken are well coated in seasoning.  Allow to stand in refrigerator for 45-60 minutes.  Pre-heat air fryer to 200 degrees.  Lightly dust marinated chicken with an extra sprinkle of wholemeal flour.  Place chicken pieces in air fryer and cook for 25-35 minutes (depending on size of chicken).   If you love chicken I promise you will love this recipe.  Enjoy 🙂
